Cucumber, Apple and Mint Smoothie
The avocado in this slushie-style smoothie gives it a rich texture, making it very illing as well as nutritious, and the laxseeds/linseeds add extra goodness, too.
1 eating apple, cored and roughly chopped
½ ripe avocado, peeled, stoned and roughly chopped
1 tbsp mint leaves
¼ cucumber, roughly chopped
½ × 227g tin pineapple in natural juice, drained (juice reserved)
1 tbsp laxseeds/linseeds
Place all the ingredients, including the reserved pineapple juice, in a blender and
blitz until totally smooth. Pour into glasses and serve.

If you prefer, prepare the fruit, mint and cucumber in advance, then transfer to a freezer bag and freeze until solid. In the morning, simply tip a third of the frozen fruit and veg mix into a blender, add 100ml of water and blitz until smooth. Add the remaining frozen fruit and veg mix and the flaxseeds/linseeds and blitz until smooth, for a chilled slushie-style smoothie.
If you have fruit that is just on the turn, this is a great way of using it up and turning it into a healthy smoothie.
